Ingredients: 

  • 4 boneless, skinless chicken breasts 
  • 1/2 cup all-purpose flour 
  • 1/4 cup olive oil 
  • 1 cup Marsala wine 
  • 1 cup chicken broth 
  • 8 ounces cremini or button mushrooms, sliced 
  • 2 cloves garlic, minced 
  • 1/4 cup heavy cream (optional, for a richer sauce) 
  • Salt and pepper to taste 
  • Fresh parsley, chopped for garnish 

Instructions: 

1. Prepare the Chicken: Place each chicken breast between two pieces of plastic wrap and pound them to an even thickness, about 1/2 inch. Season both sides with salt and pepper, then dredge in flour, shaking off any excess. 

2. Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until golden brown, about 4-5 minutes per side. Remove the chicken from the skillet and set aside. 

3. Cook the Mushrooms: In the same skillet, add the sliced mushrooms and cook until they are browned and have released their moisture, about 5 minutes. Add the minced garlic and cook for an additional minute. 

4. Deglaze the Pan: Pour the Marsala wine into the skillet, scraping up any browned bits from the bottom of the pan. Let the wine simmer until it reduces by half, about 3-4 minutes. 

5. Add the Chicken Broth: Pour the chicken broth into the skillet and bring to a simmer. Return the chicken breasts to the skillet and cook for about 10 minutes, or until the chicken is cooked through and the sauce has thickened. If you prefer a creamier sauce, you can stir in the heavy cream at this point. 

6. Garnish and Serve: Sprinkle chopped fresh parsley over the chicken before serving. Chicken Marsala pairs wonderfully with pasta, mashed potatoes, or a simple side of steamed vegetables.
